Cowboy cookies by Jartastic (and our first vlog!)

One of our presents at Christmas was a jar of cowboy cookie mix from Jacks nanny.

We love baking, especially cookies so I read the instructions with interest.

The jar contains flour, oats, baking and raising agents, walnuts, salt and chocolate chips. All you need to add is an egg, half a tsp of vanilla essence and 63g of melted butter.

The perfect, easy afternoon activity for Jack and I.

Now you’ll have to excuse how amateur our video is but my new year resolution was to push myself out my comfort zone and expand this little old blog. One of those expansions is to have a go at vlogging (video blogging).

With the help of my mini baker we beat together the egg, vanilla and butter, then mixed in the contains of the jar.

Mini baker got quite tired by the time all the mix was combined but he could still manage a grin.

Next we shaped the mixture into balls and spaced them two inches apart on a baking tray lined with grease proof paper.

After 13 minutes in the oven and a while to cool they were ready. Moist, chocolate, nutty heaven.

Gingerbread biscuits

Today Jack and I made gingerbread biscuits (and conquered his fear of messy hands, bonus).
Unfortunately our kitchen is tiny so I had to commander Jacks play table in the living room so that he could help. The recipe is nice and simple, perfect for making with your 2 year old.

Ingredients:

  • 350g plain flour
  • 175g soft brown sugar
  • 100g butter
  • 1 egg
  • 1 – 2 teaspoons of ground ginger
  • 1 teaspoon of bicarbonate of soda
  • 4 tablespoons of golden syrup
  • I used greaseproof paper as a surface for Jack to roll out the dough because we were using the kitchen surface, you probably won’t need it.

Combine the flour, ginger and soda and rub in the butter.

Add the sugar and stir in the syrup and egg to make a firm dough.

Roll out to about 5mm thick and cut into desired shape.

Place onto a greased baking tray (spaced out as they spread during cooking) and pop in the fridge for 15 minutes to help the dough firm up and keep its shape.

Bake in a preheated oven (190c) for 10 to 15 minutes.

Leave to firm for a few minutes before putting on a wire rack to cool.

I then had the difficult task of trying not to snaffle any of the lovely warm biscuits while setting everything up for Jack to decorate them.

We used red, blue and white icing and star sprinkles as well as 100’s and 1000’s (oh the mess!)

Jack certainly enjoyed the biscuits he had made and decorated, if only he helped with the clear up 🙂
